Wine professionals use a professional vocabulary to describe their taste clearly when tasting a red wine. More than 60% of the taste words are related to phenolic substances (especially the astringency of phenolic substances).

The vocabulary describing red wine is as follows:

1. grainy (Particulate)

There are particles in the mouth when the liquor is moving. Words describing graininess include talc (Talc), wet clay (Wet Clay), powder (Plaster), plaster (Claster), Chrysanthemum (Chalky) and the like.

2. surface smoothness (Surface Smoothness)

The feeling that the oral surface is in contact with the wine. Words describing the smoothness of the surface include animal fur (Furry), Velvet, silk, Suede, Emery, and the like.

3. complex (Complex)

Convergence, flavor and acidity balance, a pleasant feeling formed by the interaction of the three. Words used to describe complexity include Soft, Supple, Fleshy, Rich, and the like.

4. dry feeling (Drying)

The mouth is dry due to lack of lubricity. Words describing dryness include numb, parching, dry, and the like.

5.dynamic sense (Dynamic)

It involves the feeling of oral movement. Words that describe dynamic sense include Pucker, Chewy, Grippy, Adhesive, and the like.

6. rough feeling (Harsh)

The acidity and the roughness are rough and unbalanced, resulting in an unpleasant feeling. Words that can describe roughness are Hard, Abrasive, Aggressive, and the like.

7. Immature (Unripe)

The unpleasant feeling of excessive astringency, sourness and excessive green flavor is mainly due to the insufficient maturity of the grapes. Words that can describe immature mouthfeel include Green, Sappy, Resinous, and the like.

 

8.Irritation (Irritation)

It is mainly a stimulating sensation brought by carbonation and acid. The words used to describe the irritating sensation include Tingly, Spritzy, Prickle, and the like.

9. heat (Heat)

Mainly the feeling brought by alcohol. Words that can be used to describe the thermal sensation include hot, warm, and the like.

10. texture (Texture)

The feeling that tannins bring to the surface of the mouth. Words that can describe texture include smooth, creamy, oily, and the like.

11. weight (Weight)

The weight of the wine that the tongue perceives. Words that can describe weight include thin, thick, watery, and the like.

When friends are tasting wine or attending a wine reception, they can use the above vocabulary to discuss with others. Wine is more to try and practice in person.
